Recipe by our WW Coach Shellie. Quick, filling and super tasty, this speedy, savoury muffin can be enjoyed hot or cold any time of the day. For a vegetarian version, omit bacon and add in a sliced mushroom instead.


White self-raising flour

2 tbs

Skim milk

1 tbs


1 medium

Light mozzarella cheese

1 tbs, grated

Cherry tomatoes

2 individual, quartered

Shortcut bacon

22 g, (buy 25g), fat trimmed, chopped

Oil spray

1 x 3 second spray(s)


  1. Combine flour, milk and egg in small bowl. Season with salt and pepper and whisk with a fork to form a smooth batter. Stir in cheese, tomatoes and bacon.
  2. Lightly spray a 200ml-capacity microwave-safe mug with oil. Spoon mixture into mug. Microwave on High (100%) for 1 minute 45 seconds or until set. Stand 2 minutes before serving.


To add some extra flavour, stir through 1 teaspoon chopped fresh chives with the cheese, or sprinkle fresh chives over the top to serve.
