Shellie's savoury breakfast mug muffin
Recipe by our WW Coach Shellie. Quick, filling and super tasty, this speedy, savoury muffin can be enjoyed hot or cold any time of the day. For a vegetarian version, omit bacon and add in a sliced mushroom instead.
White self-raising flour
Light mozzarella cheese
1 tbs, grated
2 individual, quartered
22 g, (buy 25g), fat trimmed, chopped
1 x 3 second spray(s)
- Combine flour, milk and egg in small bowl. Season with salt and pepper and whisk with a fork to form a smooth batter. Stir in cheese, tomatoes and bacon.
- Lightly spray a 200ml-capacity microwave-safe mug with oil. Spoon mixture into mug. Microwave on High (100%) for 1 minute 45 seconds or until set. Stand 2 minutes before serving.
To add some extra flavour, stir through 1 teaspoon chopped fresh chives with the cheese, or sprinkle fresh chives over the top to serve.
