Sausage and sweet potato bake

Ingredients
Extra lean pork sausage
8 thin, (8 x 58g)
Orange sweet potato (kumara)
2 medium, (360g) cut into small wedges
Red onion
2 medium, cut into wedges
Red capsicum
1 medium, sliced
Yellow capsicum
1 medium, sliced
Whole grain mustard
3 tsp
Smoked paprika
½ tsp
Cherry tomatoes
250 g
Garlic
4 clove(s), peeled
Oil spray
1 x 3 second spray(s)
Instructions

Preheat oven to 200°C. Combine sausages, sweet potato, onion and capsicums in a large bowl. Add mustard and paprika and lightly spray with oil. Using hands, toss until well coated.

Arrange sausages and vegetables in a large baking dish. Bake for 30 minutes. Add tomatoes and garlic and bake for 15 minutes or until sweet potatoes are golden and cooked through. Serve.
