Fragrant spices and a fresh, summery salsa take grilled salmon to the next level in this fast and fabulous combo.

Ingredients

Peach(es)

1 medium, ripe, diced

Mango

1 medium, diced

Red onion

½ medium, finely chopped

Fresh coriander

2 tbs, chopped

Fresh green chilli

1 whole, finely chopped

Lime juice

2 tsp

Honey

½ tsp

Olive oil

½ tsp

Ground cumin

1 tsp

Chilli powder

½ tsp

Dried oregano

½ tsp

Skinless salmon

500 g, (4 x 125g)

Lime(s)

1 medium, wedges to serve

Oil spray

1 x 3 second spray(s)

Instructions

  1. To make salsa, place peach, mango, onion, coriander, chilli, lime juice, honey and oil in a medium bowl and stir gently to combine.
  2. Combine cumin, chilli powder, oregano and ½ teaspoon salt in a small bowl. Rub spice mixture over both sides of salmon fillets.
  3. Lightly spray a grill pan with oil and heat over medium-high heat until hot. Cook salmon for 3-4 minutes on each side, or until lightly charred and cooked to your liking.
  4. Spoon salsa over salmon. Serve with lime wedges.

Notes

TIP: Salsa can be made up to 1 day ahead and kept in a container in the fridge.
