Succulent prawns in a Moroccan-style tomato sauce- too good not to try it!

Ingredients

Olive oil

1 tbs

Zucchini

2 medium, finely chopped

Garlic

1 clove(s), thinly sliced

Moroccan seasoning

3 tsp

Canned diced tomatoes

400 g, (1x400g can)

Raw peeled prawns

600 g, tains intact

Fresh coriander

½ cup(s), chopped

Pine nuts

1 tbs, toasted

Instructions

  1. Heat the oil in a large saucepan over medium-high heat. Cook the zucchini and garlic, stirring, for 3-4 minutes or until the zucchini is golden. Add the seasoning and cook, stirring, for 1 minute or until fragrant.
  2. Add the tomato and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes. Add the prawns and simmer, uncovered, for 5 minutes or until prawns are just cooked through and zucchini is tender.
  3. Stir in the coriander. Serve the tagine sprinkled with the pine nuts.

Notes

SERVING SUGGESTION: Steamed green beans and lemon wedges, plus pearl couscous.
