These tender vanilla poached pears are guaranteed to make any guest feel special.

Ingredients

Vanilla bean

1 whole, halved lengthways

Granulated stevia sweetener

cup(s), (145g)

Orange rind

1 tbs, 2x5cm strips

Cinnamon quill

1 whole

Pear, fresh, peeled

4 regular, stem intact

Low fat, no added sugar ice cream

4 scoop(s), small, (4x45g scoops)

Instructions

  1. Use the tip of a sharp knife to scrape vanilla bean seeds into a medium saucepan. Add bean pod, sweetener, rind, cinnamon and 1L (4 cups) water. Place over medium-high heat and bring to the boil.
  2. Add pears. Reduce heat and simmer, uncovered, for 20–25 minutes or until pears are just tender. Allow pears to cool in mixture for 15 minutes. Use a slotted spoon to transfer pears to serving bowls.
  3. Bring mixture to the boil over high heat. Boil for 10–15 minutes or until mixture has reduced and thickened. Pour mixture over pears. Serve with ice-cream.

Notes

TIP: Beurre bosc or packham pears are best for this recipe as they will hold their shape well during cooking. The cooking time will vary depending on the ripeness of the pears.
