Poached apple, pear and blackberries
Green apple, unpeeled
6 medium, peeled, cored, cut into wedges
6 medium, firm, peeled, cored, cut into wedges
⅔ cup(s), (160ml)
2 tsp, finely grated
200 g, thawed
No-fat, no added sugar vanilla yoghurt
500 g, (175g each)
LSA seed mix (linseed, sunflower, almond)
¼ cup(s), (40g)
- Combine apple, pear, juice, rind and sugar in a large saucepan over medium-high heat. Bring to the boil. Reduce heat and simmer, covered, for 8–10 minutes or until fruit is just tender. Cool.
- Fold blackberries into cooled fruit mixture. Serve topped with yoghurt and LSA mix.
