This elegant compote is best enjoyed at room temperature to bring out the full flavours of the gently poached fruit


Green apple, unpeeled

6 medium, peeled, cored, cut into wedges


6 medium, firm, peeled, cored, cut into wedges

No added sugar orange juice

Orange rind

2 tsp, finely grated

Caster sugar

1½ tbs

Frozen blackberries

200 g, thawed

99% fat-free vanilla yoghurt, sweetened

500 g, (175g each)

LSA seed mix (linseed, sunflower, almond)

¼ cup(s), (40g)


  1. Combine apple, pear, juice, rind and sugar in a large saucepan over medium-high heat. Bring to the boil. Reduce heat and simmer, covered, for 8–10 minutes or until fruit is just tender. Cool.
  2. Fold blackberries into cooled fruit mixture. Serve topped with yoghurt and LSA mix.


LSA mix is a mixture of ground linseeds, sunflower seeds and almonds. It is available in the health-food aisle of most supermarkets and from health-food stores. It has a high oil content so store in an airtight container in the fridge.
