One pan peach crumble
Reduced fat oil spread
40 g, hard variety, crumbled
Dry rolled oats
5 medium, halved, stones removed, thickly sliced
1 whole, halved lengthways
⅔ cup(s), vanilla, warmed (165g)
- 1 To make crumble, melt half the oil spread in a medium non-stick frying pan over medium-high heat. Add amaretti biscuits, oats, brown sugar and cinnamon. Cook, stirring for 3-4 minutes, until crisp and golden. Transfer crumble to a bowl and set aside.
- Melt remaining spread in the same frying pan over medium high heat. Add peach slices, vanilla pod and ⅓ cup (80ml) water and bring to a simmer. Simmer for about 4 minutes, stirring occasionally, until peaches have softened. Scatter crumble over peaches.
- Serve with warm custard.
