One pan peach crumble

This easy and delicious one pan dessert is quick to prepare on those cold winter nights. The perfect way to end a day, without all the cleaning.


Ingredients
Reduced fat oil spread
30 g
Amaretti biscuits
40 g, hard variety, crumbled
Rolled oats, dry
25 g
Brown sugar
1 tbs
Ground cinnamon
¼ tsp
Peach(es)
5 medium, halved, stones removed, thickly sliced
Vanilla bean
1 whole, halved lengthways
Low-fat custard
⅔ cup(s), vanilla, warmed

1 To make crumble, melt half the oil spread in a medium non-stick frying pan over medium-high heat. Add amaretti biscuits, oats, brown sugar and cinnamon. Cook, stirring for 3-4 minutes, until crisp and golden. Transfer crumble to a bowl and set aside.

Melt remaining spread in the same frying pan over medium high heat. Add peach slices, vanilla pod and ⅓ cup (80ml) water and bring to a simmer. Simmer for about 4 minutes, stirring occasionally, until peaches have softened. Scatter crumble over peaches.

Serve with warm custard.
