Nikki's hot cross waffles
White self-raising flour
1 cup(s), (150g)
Granulated stevia sweetener
99% fat-free, plain or natural yoghurt, unsweetened
⅔ cup(s), (160g)
Sugar-free maple syrup
- Combine flour, cinnamon, spice, salt, stevia, currants and rind in a large bowl. Stir in yoghurt until combined enough to knead. Turn out onto a lightly floured bench and knead until dough is soft and smooth. Divide into 5 parts.
- In a small bowl, combine plain flour and 2 teaspoons of water to make a smooth paste for the crosses.
- Heat a waffle iron following instructions. Shape a dough blob into a ball and flatten slightly. Using a teaspoon make a cross with the paste. Place in waffle iron and cook for 6 minutes. Repeat to make 4 more waffles.
- Combine syrup, sugar and cinnamon in a small bowl. Brush over waffles while still hot. Serve.
