Nikki's carrot cake and apple loaf with cream cheese frosting

Ingredients
Wheat bran cereal
½ cup(s), (45g)
Rolled oats, dry
½ cup(s), (45g)
White self-raising flour
½ cup(s), (75g)
Baking powder
2 tsp
Bicarbonate of soda
½ tsp
Banana(s)
2 medium, ripe, mashed
Sugar-free maple syrup
1 tbs
Ground cinnamon
1 tbs
Egg(s)
2 medium
Fresh dates
4 individual, pitted, chopped
Carrot(s)
1 cup(s), grated, (120g), finely grated
Apple(s)
1 small, cored and cut into small cubes
Walnuts
1½ tbs, chopped
99% fat-free, plain Greek yoghurt, unsweetened
¼ cup(s), (60g)
Light cream cheese
50 g
Orange rind
2 tsp, finely grated
Icing sugar
2 tsp
Instructions

Preheat oven to 180°C. Lightly spray a 10 cm x 20 cm loaf tin with oil and line base and sides with baking paper.

Place bran in a small heatproof bowl. Pour over ¼ cup (60 ml) boiling water. Stand for 5 minutes or until water is absorbed and bran is soft.

Process oats in a small food processor until coarsely chopped. Add soaked bran, flour, baking powder, bicarbonate of soda, banana, syrup, cinnamon, eggs and dates. Pulse to combine. Transfer mixture to a medium bowl. Stir through carrot and apple.

Spoon mixture into prepared tin and spread evenly. Bake for 45–50 minutes or until a skewer inserted in centre comes out clean. Turn onto a wire rack to cool completely.

To make cream cheese frosting, mix all ingredients in a medium bowl until well combined. Spread frosting over cooled loaf, sprinkle with walnuts and slice to serve.
