Mixed berry sorbet

For a light summery dessert, try our mixed berry sorbet. It's packed with fruity flavour and delivers a delicious tang.

Ingredients

Frozen raspberries

450 g

Frozen berries

450 g, (mixed)

Caster sugar

1½ cup(s)

Vanilla bean paste

2 tsp

Brandy

2 tbs, or cherry liqueur

Egg white

3 medium

Almond bread

8 individual

Instructions

  1. Place berries, sugar, vanilla and ½ cup water in a large saucepan over low heat and stir until sugar dissolves. Bring to the boil. Boil for 5 mins or until thickened slightly. Remove from heat. Stir in liqueur.
  2. Pour mixture into a plastic container and freeze for 3-4 hrs or until the sides are firm to touch.
  3. Process berry mixture with egg whites until smooth and combined. Return to container and freeze overnight or until firm. Serve scoops with almond wafers or almond bread.

Notes

Try to use a variety of lighter coloured berries like raspberries and strawberries. Darker berries like blackberries and cherries will turn the sorbet a dark purple colour.
