Mango and lime sorbet

Light, fruity and refreshing, there’s no need to skip dessert when this icy treat is on offer.
6 medium, ripe, chopped
1 tsp, finely grated
1 tsp, granulated
- Process all ingredients in a food processor until smooth. Pour into a reusable freezer-proof container. Cover and freeze for 2 hours or until mixture starts to freeze around the edges. Remove from freezer, break up frozen edges with a fork and stir well.
- Repeat the freezing and stirring process twice more, until consistency is smooth and slushy. Return to freezer until firm. Serve scooped into serving glasses.
For extra tropical flavour, omit lime rind and juice and stir 2 tablespoons passionfruit pulp through puréed mango in step 1. Serve topped with a sprinkle of toasted coconut flakes. Serve with fresh blueberries.
