Mango and lime sorbet

Light, fruity and refreshing, there’s no need to skip dessert when this icy treat is on offer.


Ingredients
Mango
6 medium, ripe, chopped
Lime rind
1 tsp, finely grated
Lime juice
2 tbs
Natural sweetener
1 tsp, granulated
Instructions

Process all ingredients in a food processor until smooth. Pour into a reusable freezer-proof container. Cover and freeze for 2 hours or until mixture starts to freeze around the edges. Remove from freezer, break up frozen edges with a fork and stir well.

Repeat the freezing and stirring process twice more, until consistency is smooth and slushy. Return to freezer until firm. Serve scooped into serving glasses.
