Ingredients

Mango

6 medium, ripe, chopped

Lime rind

1 tsp, finely grated

Lime juice

2 tbs

Granulated stevia sweetener

2 tsp

Instructions

  1. Put mango in a food processor. Add lime juice, zest and stevia. Whiz to a smooth puree, then pour into a freezerproof container. Cover and freeze for 2 hours, then remove from the freezer, break up with a fork and stir well.
  2. Repeat the freezing and stirring process twice more, until the sorbet has a smooth consistency. Return to the freezer until firm, then serve in scoops.

Notes

SERVING SUGGESTION: Add either the pulp of 2 passionfruit with mango in Step 1 or 1 tbs flaked coconut (toasted) sprinkled on top, to serve. VARIATION: Swap mangoes for 1kg frozen raspberries.
