Granitas are an easy, refreshing frozen treat. When you use naturally sweet, juicy fruit that’s in season, no additional sugar is needed. To achieve a perfect, flaky snow-cone texture, scrape the mixture with a fork every 30 minutes until it is frozen. Before serving, give the mixture one last scrape with the fork to freshen it up.

Ingredients

Mango

1000 g, (1kg), frozen pieces, thawed

Lime rind

2 tsp, finely grated

Lime(s)

½ medium, cut into thin slices, to serve

Instructions

  1. Purée mango, lime rind and ½ cup (125ml) water in a large blender or food processor until smooth. Pour into a 23cm round pie dish or 22cm square cake tin. Freeze for 30 minutes. Remove from freezer and use a fork to stir any frozen bits around edge into the centre. Continue to stir and scrape frozen fruit from edges to centre every 30 minutes until granita is completely frozen, about 6 hours. Serve topped with a thin slice of lime.

Notes

If you have a smaller blender or food processor, purée the fruit in 2-3 batches, so you do not burn out the motor.
