Lamb with mushy mint peas

Who said meat and veg had to be boring? These juicy lamb steaks are complemented with flavoursome minty peas for a match made in heaven.


Ingredients
Lamb leg steak, raw
320 g, (buy 400g), fat trimmed
Frozen green peas
2 cup(s), (240g)
Green shallot(s)
1 tsp, chopped
Fresh mint
1 tbs, chopped
Oil spray
1 x 3 second spray(s)

Lightly spray a large non-stick frying pan with oil and heat over high heat. Season lamb with salt and pepper. Cook lamb for 2 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Rest for 2 minutes.

Meanwhile, cook peas in a small saucepan of boiling water for 3 minutes or until tender. Drain. Return to saucepan. Coarsely mash. Stir in shallot and mint. Season with salt and pepper.

Serve lamb on mushy peas.
