Honey soy tofu with stir-fried vegetables

200 g, honey soy
Vegetable mix, non-starchy, frozen
1 bunch(es), trimmed
2 clove(s), sliced
Brown rice microwave packet
250 g, (1 packet)
1 x 3 second spray(s)
- Heat an oil-sprayed wok or large non-stick frying pan over medium-high heat. Add tofu and cook for 1½ minutes each side or until browned. Set aside, cool slightly and cut into four pieces.
- Cut choy sum stems into 3cm pieces and the leaves into 4cm pieces. Spray wok again with oil. Add the stir-fry vegetables and choy sum stems, and stir-fry for 4 minutes. Add garlic, sauces, choy sum leaves and tofu, stir-fry for a further minute.
- Meanwhile, heat rice in microwave following packet instructions. Serve rice topped with stir-fry.
