This recipe has all the delicious elements of a Greek salad, just served as a burger. The chicken soaks up flavour from the tangy, dressing-like marinade, then cooks on a grill pan for a hit of char and sear. You can make the creamy feta spread ahead of time if you want—and if there’s any left over, it would taste great on baked potatoes.

Ingredients

Skinless chicken breast

500 g, (4 x 125g)

Olive oil

2 tsp

Red wine vinegar

1 tsp

Fresh dill

1 tsp, chopped

Dried oregano

½ tsp

Garlic powder or flakes

¼ tsp

Reduced fat feta cheese

80 g

Skim milk

3 tsp

Red onion

¼ medium, finely chopped

Cos lettuce

4 baby, leaves

White bread roll

4 medium, (4 x 50g), split, toasted

Tomato(es)

1 medium, sliced

Oil spray

1 x 3 second spray(s)

Instructions

  1. Place chicken breasts between 2 pieces plastic wrap and gently pound with a mallet to an even 1cm thickness. Place in a large shallow dish.
  2. Place oil, vinegar, dill, oregano and garlic powder in a small bowl. Season with salt and pepper and whisk to combine. Pour over chicken and turn to coat both sides. Stand 10 minutes.
  3. Lightly spray a grill pan with oil and heat over medium-high heat until hot. Cook chicken for 2-3 minutes on each side or until lightly charred and cooked through.
  4. Meanwhile, mash feta, milk and onion in small bowl with a fork until spreadable.
  5. Layer lettuce and chicken over roll bases. Spread with feta mixture, then top with tomato and roll tops.

Notes

TIP: Save on the prep time and jump straight to step 2 by using uncrumbed chicken breast schnitzels, available from the refrigerated chicken cabinet in major supermarkets.
