When it comes to a special occasion to feed a crowd, roast pork is a popular choice but pork crackling can tip your SmartPoints Budget over the edge. Here, we use lean pork with garlic and a fresh herb rub, then serve a lovely apple and pear sauce on the side, for a winning flavour combination.

Ingredients

Pork loin roast, raw

1500 g, (Buy 2kg) fat and rind trimmed

Garlic

3 clove(s), thinly sliced

Fresh rosemary

1 tbs, chopped

Fresh thyme

1 tbs, chopped

Olive oil

2 tsp

No added sugar apple puree

2 cup(s), (500ml)

Pear(s)

2 medium, ripe, peeled, chopped

Fresh chives

¼ cup(s), finely chopped, chopped

Instructions

  1. Preheat oven to 180°C. Using the tip of a small, sharp knife make about 24 shallow incisions across top of pork. Insert garlic into incisions.
  2. Combine rosemary, thyme, oil, 1 teaspoon salt and ½ teaspoon pepper in a small bowl. Rub mixture all over pork.
  3. Line a large roasting pan with foil. Place a wire rack in prepared pan. Sit pork on rack and bake for about 1¼ hours, or until pork is cooked through and a meat thermometer registers 71°C when inserted into centre. Transfer to a large plate, cover loosely with foil and rest for 15 minutes.
  4. Meanwhile, to make sauce, combine apple puree, pears and chives in a medium bowl.
  5. Slice pork and arrange on a platter. Spoon over any meat juices remaining on plate. Serve with apple and pear sauce.
