Feta and black bean quesadillas
Canned black beans, rinsed, drained
1 400g can, (1 x 400g can)
1 medium, thinly sliced
½ cup(s), chopped
Reduced fat feta cheese
4 small, (4 x 40g tortillas)
2 x 3 second spray(s)
- Combine beans, onion, cumin, coriander and lime in a large bowl. Add feta and stir gently to combine. Season with salt and pepper.
- Place 2 tortillas on a work surface and spoon half the filling over each one. Top with 2 remaining tortillas. Lightly spray a large non-stick frying pan with oil. Add quesadillas one at a time and cook for 3-4 minutes. Remove from heat, lightly spray top with more oil then flip onto a plate and slide back into pan and cook over medium heat for 3-4 minutes or until golden. Transfer to a board, quarter and serve.
