A total showstopper of a meal with just a few delicious ingredients. The bagel seasoning crust is so tasty and the cream cheese filling adds moisture and flavour to the chicken. Complete the meal by serving with your favourite seasonal steamed greens or a leafy salad.


Light cream cheese

90 g, softened

Green shallot(s)

2 individual, finely chopped


¼ medium, deseeded, finely chopped

Skinless chicken breast

600 g, (buy 2 x 300g breasts)

Everything bagel seasoning

2 tbs

Vegetable mix, non-starchy, cooked without added fat

380 g, (green vegetables), to serve

Oil spray

2 x 3 second spray(s)


  1. Preheat oven to 180°C. Line a baking tray with baking paper and lightly spray with oil.
  2. Mix cheese, shallots and tomato in a small bowl until combined. Cut chicken breasts in half lengthways to create 4 fillets. Using a small sharp knife, cut a horizontal slit along the side of each fillet to form a pocket. Stuff chicken pockets evenly with the cheese mixture.
  3. Spread seasoning over a plate. Lightly spray the top of each fillet with oil, then press oiled-side down into seasoning to coat. Arrange chicken on prepared tray, seasoning-side up. Bake for 25-30 minutes, until chicken is cooked through. Serve with steamed vegetables.


INGREDIENT TIP: Everything bagel seasoning consists of sesame seeds, poppy seeds, garlic, onion and salt. It’s available from some supermarkets and online. To make your own, toast 1 tablespoon each of white and black sesame seeds in a small frying pan until fragrant. Transfer to a bowl to cool, then stir in 1 tablespoon poppy seeds, 1 tablespoon dried onion flakes, 1 tablespoon dried garlic granules and 2 teaspoons salt flakes. Store in an airtight container or jar in the pantry for up to 3 months. TO REFRIGERATE: Store any leftover chicken in a reusable container for up to 2 days. Thinly slice and serve cold with salad or add to wraps or sandwiches.
