Everything chicken stuffed with cream cheese
Light cream cheese
90 g, softened
2 individual, finely chopped
¼ medium, deseeded, finely chopped
Skinless chicken breast
600 g, (buy 2 x 300g breasts)
Everything bagel seasoning
Vegetable mix, non-starchy, cooked without added fat
380 g, (green vegetables), to serve
2 x 3 second spray(s)
- Preheat oven to 180°C. Line a baking tray with baking paper and lightly spray with oil.
- Mix cheese, shallots and tomato in a small bowl until combined. Cut chicken breasts in half lengthways to create 4 fillets. Using a small sharp knife, cut a horizontal slit along the side of each fillet to form a pocket. Stuff chicken pockets evenly with the cheese mixture.
- Spread seasoning over a plate. Lightly spray the top of each fillet with oil, then press oiled-side down into seasoning to coat. Arrange chicken on prepared tray, seasoning-side up. Bake for 25-30 minutes, until chicken is cooked through. Serve with steamed vegetables.
