Ingredients

White self-raising flour

½ cup(s), (75g)

Plain flour

¼ cup(s), (35g)

Cocoa powder

¼ cup(s), (25g)

Dry rolled oats

cup(s), (30g)

Brown sugar

cup(s), (75g)

Fresh dates

½ cup(s), pitted, coarsely chopped (115g)

Low fat chocolate mousse

2 tub(s), (2 x 62g tubs)

Egg(s)

1 medium, lightly beaten

Olive oil

1 tbs

Skim milk

½ cup(s), (125ml)

Walnuts

cup(s), (35g), chopped

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 21cm square slice tin with oil (see note). Line base and sides with 1 sheet of baking paper.
  2. Sift self-raising and plain flours and cocoa into a large bowl. Add rolled oats, brown sugar and dates and stir to combine.
  3. Whisk chocolate mousse, egg, oil and milk in a small bowl until combined. Stir mousse mixture into flour mixture.
  4. Spoon mixture into prepared tin and sprinkle with walnuts. Bake for 20–25 minutes or until cooked when tested with a skewer. Stand slice in tin for 10 minutes before turning out onto a wire rack to cool completely. Cut into squares to serve.

Notes

You can use a 20cm square cake tin instead of a 21cm square slice tin.
