Looking for a delicious and easy dinner or brunch recipe? Look no further than these cottage cheese and zucchini fritters! Made with ZeroPoint cottage cheese, grated zucchini, chopped green shallots, eggs, fresh dill, and flour, these fritters are both nutritious and satisfying. Simply mix the ingredients together, form into fritters, and cook in a non-stick frying pan until golden and cooked through. Serve warm with a dollop of extra cottage cheese and a drizzle of sweet chilli sauce for the perfect lazy Sunday morning breakfast or midweek meal.

Ingredients

97% fat-free cottage cheese

250 g

Zucchini

2 medium, coarsley grated

Green shallot(s)

2 individual, trimmed, finely chopped

Egg(s)

2 medium, lightly beaten

Fresh dill

1 tbs, sprigs, coarsley chopped

White self-raising flour

Olive oil

Sweet chilli sauce

Instructions

  1. Place half the cheese in a bowl. Add zucchini, shallots, eggs, dill and flour. Stir until well combined. Season with salt and freshly ground black pepper.
  2. Heat a large non-stick frying pan over medium heat. Add ½ tsp of the oil and swirl to cover the base of the pan. Form 4 fritters with 2 1/2 tbs of mixture each. Cook over medium heat for 2 mins on each side or until golden and cooked through. Transfer fritters to a warm platter, then repeat the process with remaining mixture to form a total of 12 fritters.
  3. Serve the warm fritters with a dollop of extra cottage cheese on top and drizzle with sweet chilli sauce.
