Quick and easy to make, these delightful treats come together in just 25 minutes. Made with ripe bananas, eggs, and cocoa powder, they offer a rich chocolate flavour that's sure to satisfy your cravings. Topped with a luscious drizzle of melted dark chocolate, these muffins are perfect for any occasion.

Ingredients

Banana(s)

3 large, very ripe, peeled, chopped (about 350g)

Egg(s)

4 medium, lightly beaten

Cocoa powder

¼ cup(s), (25g)

Dark chocolate

20 g, chopped

Instructions

  1. Preheat oven to 180°C. Line a 6-hole ⅓ cup (80ml) capacity muffin tray with paper cases.
  2. Process bananas, eggs and cocoa powder in a food processor or blender until smooth. Divide the mixture between the paper cases. Bake for 15-20 minutes, until a skewer inserted in the centre of muffins comes out clean. Transfer to a wire rack to cool.
  3. Place chocolate in a small microwave-safe bowl and microwave on High (100%) for 30 seconds or until just melted. Stir until smooth. Drizzle melted chocolate over muffins to serve.
