Chip-crusted chicken with mango salsa

Skinless chicken breast
2 large, chopped
½ medium, finely chopped
¼ medium, finely chopped
- Preheat oven to 200°C. Line a baking tray with baking paper.
- Whisk eggs and 2 tablespoons water in a shallow bowl. Place crushed chips on a plate. Place flour on a second plate. Working with 1 piece at a time, coat chicken in flour, then egg mixture and chips. Place chicken on prepared tray. Bake for 20-25 minutes, turning halfway through cooking time, or until chicken is golden and cooked through.
- Meanwhile, combine mango, capsicum, onion, juice and mint in a medium bowl. Season salsa with salt and pepper. Serve chicken with mango salsa.
