Ingredients

Hoisin sauce

1 tbs

Sweet chilli sauce

1 tbs

WW Soy-poached chicken breasts

2 fillet(s), defrosted, shredded (search for the recipe at WW.com.au)

Plain Chinese pancake

8 small, (8 x 20g)

Carrot(s)

1 medium, cut into matchsticks

Lebanese cucumber

1 medium, cut into matchsticks

Green shallot(s)

3 individual, finely shredded

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine hoisin and sweet chilli sauces in a small bowl and set aside.
  2. Lightly spray a large non-stick frying pan with oil and heat over a medium-high heat. Stir-fry chicken for 2-3 minutes, until hot. Stir in sauce mixture and keep warm.
  3. Meanwhile, heat pancakes following packet instructions. Top pancakes with chicken mixture, carrot, cucumber and shallots and roll up to serve.

Notes

TIP: Chinese pancakes are available from the freezer section in Asian grocery stores. Alternatively, substitute with mini tortillas.
