Ingredients

Dry udon noodles

180 g

Skinless chicken breast

500 g, cut into 3cm pieces

Shiitake mushrooms

200 g, thickly sliced

Pak choy

1 bunch(es), thickly sliced

Choy sum

1 bunch(es), thickly sliced

Mirin seasoning

1 tbs, seasoning

Soy sauce

1 tbs

Worcestershire sauce

1 tbs

Oil spray

2 x 3 second spray(s)

Instructions

  1. Prepare noodles following packet instructions until just tender. Rinse under cold water. Drain.
  2. Meanwhile, lightly spray a deep non-stick frying pan with oil and heat over high heat. Cook chicken, stirring, for 3 minutes or until browned and cooked through. Transfer to a plate.
  3. Lightly spray same pan with oil and heat over medium-high heat. Cook mushrooms, stirring, for 2 minutes or until browned. Add pak choy and choy sum and cook, stirring occasionally, for 2–3 minutes or until tender. Add chicken, noodles, mirin, soy sauce, Worcestershire sauce and 1 tablespoon water and cook, stirring, for 1 minute or until heated through. Serve.

Notes

Add it: 1 tsp toasted sesame seeds sprinkled to serve. Swap it: Chicken for f irm silken tofu.
