Chicken, vegetable and peanut stir-fry

Take the angst out of dinner decisions with this fast and fabulous stir-fry, ready in ten minutes!


Sesame oil

2 tsp

Lean chicken breast mince

500 g


1 bunch(es), coarsely chopped

Kecap manis

2 tbs

Sweet chilli sauce

2 tbs

Fish sauce

1 tbs

Fresh mixed vegetables

500 g, stir-fry mix

Roasted peanuts

2 tbs, unsalted, chopped


  1. Heat the oil in a wok over high heat. Stir-fry the chicken, breaking up lumps, for 2 minutes or until golden. Add the broccolini and stir-fry for 1 minute.
  2. Add combined kecap manis, sweet chilli sauce and fish sauce and stir-fry for 1 minute. Add the stir-fry mix and stir-fry for 1 minute or until heated through. Serve the stir-fry sprinkled with the peanuts.


TIP: We used a fresh stir-fry mix consisting of carrot, cabbage, onion, and broccoli, but you can use any fresh stir-fry mix. SERVING SUGGESTION: 90-second microwave jasmine rice. VARIATION: swap fish sauce for lime juice.
