Chicken, vegetable and peanut stir-fry
Take the angst out of dinner decisions with this fast and fabulous stir-fry, ready in ten minutes!
Chicken breast mince
1 bunch(es), coarsely chopped
Sweet chilli sauce
Vegetable mix, non-starchy, fresh
500 g, stir-fry mix
2 tbs, unsalted, chopped
- Heat the oil in a wok over high heat. Stir-fry the chicken, breaking up lumps, for 2 minutes or until golden. Add the broccolini and stir-fry for 1 minute.
- Add combined kecap manis, sweet chilli sauce and fish sauce and stir-fry for 1 minute. Add the stir-fry mix and stir-fry for 1 minute or until heated through. Serve the stir-fry sprinkled with the peanuts.
TIP: We used a fresh stir-fry mix consisting of carrot, cabbage, onion, and broccoli, but you can use any fresh stir-fry mix. SERVING SUGGESTION: 90-second microwave jasmine rice. VARIATION: swap fish sauce for lime juice.
