The crunch of hazelnuts and smoothness of the custard really do make this dish. For a great tropical flavour, top with shredded coconut.

Ingredients

Shredded or desiccated coconut

2 tbs, or shredded

Hazelnut meal

cup(s), (35g)

Banana(s)

4 medium, halved horizontally

Oil spray

1 x 3 second spray(s), (coconut oil spray)

Reduced-fat vanilla custard

cup(s), (160ml)

Light coconut cream

cup(s), (160ml)

Instructions

  1. Stir the coconut in a large non-stick frying pan over medium heat for 1-2 minutes or until light golden. Transfer to a plate.
  2. Spread the hazelnut meal over a plate. Coat the banana halves in the hazelnut meal.
  3. Reheat the frying pan over medium-high heat. Lightly spray the banana halves with coconut oil. Cook for 3 minutes each side or until lightly golden.
  4. Meanwhile, whisk the custard and coconut cream in a bowl until well combined.
  5. Divide the bananas and custard among serving plates. Sprinkle with the toasted coconut.
