3 medium, separated

Caster sugar

½ cup(s), (110g)

Fresh lemon rind

2 tsp, grated

99% fat-free vanilla yoghurt, sweetened

150 g

Lemon juice

½ cup(s), (125ml)

Skim milk

1½ cup(s), (375ml)

White self-raising flour

½ cup(s), (75g)


  1. Preheat oven to 180°C. Do not use fan-forced. Lightly spray a 1.5L (6-cup) capacity ovenproof dish with oil.
  2. Using electric beaters, beat egg whites in a large, clean dry bowl until soft peaks form. In a separate bowl, beat egg yolks, sugar and rind for 2 minutes or until light and creamy. Fold NESTLÉ DIET Apple Crumble Custard Yoghurt into yolk mixture with lemon juice and milk, then fold in flour and egg whites.
  3. Spoon mixture into prepared baking dish, then bake for 45 minutes or until pudding is golden and cooked. Stand in dish for 5 minutes before serving.
