100 g, cut into 3cm cubes

Zucchini

½ medium, cut into 2cm slices

Mushrooms

4 whole, small

Green capsicum

½ medium, cut into 3cm pieces

Brown onion

¼ medium, halved

Teriyaki sauce

1 tbs

Olive oil

1 tsp

Cooked brown rice

Notes

Alternate cubes of tofu with vegetables on skewers. Heat chargrill or barbecue to medium. Cook skewers brushing with combined teriyaki and oil for 3-5 minutes or until lightly browned and vegetables are just cooked. Serve with rice.
