Reduced fat feta cheese

Notes

Arrange sweet potato onto a baking tray and lightly spray with oil. Bake in oven preheated to 180°C or 160°C fan-forced for 20 minutes. Add onion and bake until golden and tender. Cool for 5 minutes. Add feta season with pepper. Arrange potato mixture in small round ovenproof dish. Pour over eggs and bake until golden and set. Serve with roasted roma tomatoes and a leafy green salad.
