Process 4 ripe tomatoes, ½ Lebanese cucumber, ¼ brown onion, 1 tbs red wine vinegar, 1 tsp olive oil, 5 mint leaves and ½ garlic clove in a food processor until smooth. Add a little water to adjust texture and process again. Season. Serve sprinkled with 1 slice high-fibre wholegrain bread (toasted, cut into croutons), 2 slices prosciutto (fat trimmed, chopped), 1 hardboiled egg (chopped), ¼ green capsicum (finely chopped) and 2 tsp pine nuts (toasted).
