WW Ambassador Mandi (@mandi_lous_world) shares her TikTok-inspired omelette-fold hack. Get creative and have fun with different fillings that you enjoy.

Ingredients

Button mushrooms

5 whole, sliced

Egg(s)

2 medium, lightly beaten

Baby spinach

½ cup(s), (10g)

97% fat-free deli sliced ham

50 g, (leg ham)

Bocconcini

10 g, torn

Oil spray

2 x 3 second spray(s)

Instructions

  1. Lightly spray a medium non-stick frying pan with oil and heat over medium–high heat. Cook mushrooms, stirring occasionally, for 5 minutes, or until light golden. Transfer to a small bowl and set aside.
  2. Lightly spray the same pan with oil and heat over medium heat. Pour in eggs to cover base of pan and cook for 30 seconds. Using a spatula, make a cut in omelette from the centre to the bottom edge.
  3. Place baby spinach over bottom left quarter of omelette, then place ham over top left quarter, bocconcini over top right quarter and mushrooms over bottom right quarter. Season with salt and pepper.
  4. Starting from bottom left quarter, fold omelette and spinach over the ham on top left quarter. Continue folding in a clockwise direction over the top right quarter, then onto the bottom right quarter to enclose fillings and form a triangle. Carefully flip over and cook omelette wrap for a further 1 minute to heat through. Serve.

Notes

COOK'S TIPS: Make sure you use a non-stick frying pan and cook the omelette until set to ensure it slides out easily for filling and folding. Serve sprinkled with chopped fresh parsley or basil for some added flavour.
