We stuff low-carb whole-wheat tortillas with sautéed zucchini, sweet onion, and spinach for lots of flavor and texture; feel free to use other vegetables that you might have on hand. The recipe is for one pizzadilla; if you’d like to make more, cook them one at a time in a skillet and arrange on a sheet pan to broil (you should be able to fit 3 on the pan).
