If you need a lunchtime sandwich shake-up, look no further. This wrap has all the key components: sweetness from the apple, spice from the chili powder, acidity from the lime, and umami from the beef. Make it vegetarian by swapping in baked tofu for the beef.

Apple
¼ medium, Gala or other crisp apple, cut into matchsticks
Carrots
½ medium, shredded
Uncooked scallions
½ medium, thinly sliced
Light mayonnaise
1 tbsp(s)
Fresh lime juice
1 tsp(s)
Table salt
⅛ tsp(s)
Chipotle chili powder
⅛ tsp(s), or to taste
96% fat free whole wheat tortilla (7-8")

Cooked lean and trimmed beef sirloin
3 oz, thinly sliced
Avocado
⅛ medium, cut into 3 thin slices
Arugula
¼ cup(s), baby variety, lightly packed
Instructions

In small bowl, combine apple, carrot, scallion, mayonnaise, lime juice, salt, and ground chipotle; mix well.

Layer tortilla with roast beef. In line across roast beef, arrange avocado slices and top with apple mixture and arugula. Gently roll up tortilla and wrap securely in plastic wrap to keep the roll tight. Refrigerate at least 15 minutes or up to several hours.

Remove plastic wrap from tortilla. If you like, with serrated knife, cut tortilla into 6 slices to make spirals and arrange, cut side up, on plate.
