The delicious flavors of spring greens are highlighted by this bright and tangy Greek inspired vinaigrette. Try it topped with grilled shrimp skewers for a light.

Ingredients

White wine

2 fl oz

Fresh lemon juice

¼ cup(s)

Uncooked scallions

¼ cup(s), minced

Sugar

1 tbsp(s)

Dijon mustard

1 tsp(s)

Olive oil

2 tsp(s), extra virgin

Fresh dill

1 tbsp(s), fresh, chopped

Fresh oregano

2 tsp(s), chopped

Peppermint leaves

2 tsp(s), chopped

Kosher salt

1 tsp(s)

Black pepper

¼ pinch(es)

Fresh watercress

8 oz, leaves torn, washed and spun dry (3 cups)

Uncooked beet greens

12 oz, leaves torn, washed, spun dry (5 cups)

Uncooked dandelion greens

8 oz, leaves torn, washed, spun dry (4 cups)

Reduced-fat feta cheese

Instructions

  1. Whisk together all vinaigrette ingredients in a medium bowl. Combine greens in a large serving bowl and toss well with vinaigrette. Garnish with feta and serve.

Notes

Feel free to substitute an equal amount of any spring greens you find at the Farmer’s Market. Dandelion greens tend to be a bit bitter so if that’s not your thing swap them out with baby spinach.
