Spinach with Pine Nuts and Raisins

Pine nuts and raisins are a winning combination that complement each other so well in this dish. Though any dark leafy green will work here, we chose spinach because it cooks so quickly. Plumping the raisins is key to getting the most sweetness and best texture for the dish. Toast your pine nuts lightly for added depth of flavour. Serve this side dish with roasted pork loin or chicken. Salmon fillets also plate well with this side and, for a dinner party would be perfect as the raisins sit like jewels in the deep green of the spinach making for a beautiful presentation.

Raisins

Hot water
1 tbsp(s)
Olive oil

Garlic
1 clove(s), large, minced
Fresh spinach
5 oz
Pine nuts
1 tbsp(s), toasted
Table salt
¼ tsp(s)
Black pepper
¼ tsp(s)
Instructions

In a small microwaveable bowl, place plump raisins in hot water and cook on high heat for 30 seconds.

In a large nonstick skillet over medium-high heat, warm oil; add garlic. Cook until fragrant, about 1 minute. Add spinach and stir occasionally until wilted, about 2 to 3 minutes.

Toss with raisins, nuts, salt and pepper. Serve immediately.
