Spinach with pine nuts and raisins

This delicious side dish is sure to jazz up any holiday meal. Try it with any dark green leafy vegetable such as kale, for example, for a different touch.
1 clove(s), medium, minced
1 tbsp(s), toasted
- In a small microwaveable bowl, place plump raisins in hot water and cook on high heat for 30 seconds.
- In a large nonstick skillet over medium-high heat, warm oil; add garlic. Cook until fragrant, about 1 minute. Add spinach and stir occasionally until wilted, about 2 to 3 minutes.
- Toss with raisins, nuts, salt and pepper. Serve immediately.
