Everyone’s favourite Indian takeout dish, lightened up in a slow cooker.

Ingredients

Canned crushed tomatoes

28 oz

Uncooked onion(s)

1 small, minced

Minced garlic

1 tbsp(s)

Ginger root

1 tbsp(s), minced

Garam masala

2 tbsp(s)

Dark brown sugar

1 tbsp(s)

Ground cumin

½ tsp(s)

Ground coriander

½ tsp(s)

Uncooked boneless skinless chicken thigh(s)

2 pound(s)

Kosher salt

1 tbsp(s)

Plain lowfat Greek yogurt

½ cup(s)

Cilantro

¼ cup(s), fresh, chopped

Instructions

  1. Combine all ingredients, except yogurt and cilantro, in slow cooker. Cook on high for 3 to 4 hours or low for 6 to 8 hours. Stir in yogurt and cilantro. Yields about 1 cup chicken with sauce per serving.

Notes

Chicken thighs can hold up to a long, slow cook time - they may shred if left in for too long but the dish will still be just as delicious. You can easily double this recipe. It freezes well.
