Serve this classic Italian stew plain or over whole-wheat penne. For a spicier flavour, add a pinch of crushed red pepper flakes at the start of cooking.


Uncooked boneless skinless chicken thigh(s)

1 pound(s), boneless, cut into bite-size pieces

Fresh mushroom(s)

1 cup(s), sliced (fresh, frozen or canned)

Green bell pepper(s)

1 strip(s), sliced (fresh or frozen)

Uncooked onion(s)

1 cup(s), chopped (fresh or frozen)

Garlic clove(s)

1 large clove(s), minced

Canned tomato paste

1 tbsp(s)

Canned crushed tomatoes

14½ oz, fire-roasted

Red wine

¼ fl oz, dry-variety

Dried oregano

¾ tsp(s), crushed

Table salt

¾ tsp(s), divided

Black pepper

  1. Place chicken in a 3- to 5-quart slow cooker. Add mushrooms, green pepper, onion, garlic, tomato paste, tomatoes and juice, wine, oregano, 1/2 teaspoon of salt and black pepper.
  2. Cover slow cooker; cook on high heat for 5 to 6 hours or on low heat for 6 to 8 hours. Taste just before serving and add remaining 1/4 teaspoon of salt if necessary. Yields about 1 cup per serving.
