The bitterness of radicchio is tamed by the sweetness of onions and a touch of sugar. A wonderful Italian side dish.

Ingredients

Olive oil

2 tsp(s)

Vidalia onion

1 large, sliced

Sugar

2 tbsp(s)

Red wine vinegar

3 tbsp(s)

Uncooked radicchio

6 cup(s), about 1 large head, cored, sliced lengthwise about 1/4-inch thick

Kosher salt

½ tsp(s)

Black pepper

¼ pinch(es), freshly ground, or to taste

Instructions

  1. Heat oil in a large nonstick skillet over medium-high heat. Add onions; cook, stirring frequently, until light golden and tender, about 7 minutes. Sprinkle in sugar and stir in vinegar; stir to blend.
  2. Add radicchio, salt, and pepper to skillet. Cook, tossing frequently, until radicchio is tender, about 4 minutes; transfer to a serving dish. Yields about 1/2 cup per serving.

Notes

Stir in some raisins for an extra bit of sweetness (could affect Points value).
