Shrimp salad does not have to be a fattening nightmare: Swap full-fat mayonnaise for fat-free and you're well on your way to a slimmed-down version of a classic.

Ingredients
Uncooked shrimp
1 pound(s), large, peeled and deveined
Fat free mayonnaise
⅓ cup(s)
Celery
2 stalk(s), medium, chopped
Red onion
3 tbsp(s), chopped, minced
Fresh parsley
2 tbsp(s), fresh, chopped
Capers
1 tbsp(s), drained
Dijon mustard
2 tsp(s)
Table salt
⅛ tsp(s), or to taste
Black pepper
⅛ pinch(es), or to taste
Instructions
1
Boil shrimp in a large pot of rapidly boiling water for about 2 minutes, until bright pink and cooked through. Drain, rinse under cold water and drain again; set aside.
2
In a large bowl, combine mayonnaise, celery, onion, parsley, capers and mustard; mix well. Stir in shrimp; season to taste with salt and pepper. Serve at room temperature or chilled. Yields about 1 1/2 cups per serving. (Note: This preparation method also works well with cooked, cubed chicken breast.)
