Sautéed Sweet & Sour Cabbage with Caraway and Back Bacon

This tangy take on cabbage would be amazing with roast pork, chicken, or bratwurst. Look for pre-shredded cabbage in the produce section to shorten prep time.

Apple cider vinegar
¼ cup(s)
Dark brown sugar
2 tsp(s)
Dijon mustard
1 tsp(s)
Caraway seeds
1 tsp(s)
Salted butter
1 tbsp(s)
Red onion
1 medium, finely chopped (about 2 cups)
Uncooked Canadian bacon
3 oz, Diced, 5 slices, 1/2 cup
Kosher salt
1 tsp(s), plus additional for seasoning
Black pepper
1 pinch(es), or to taste
Shredded red cabbage

Instructions

Whisk together vinegar, sugar, mustard, and caraway seeds in a small bowl. Reserve. Heat butter in a large non-stick skillet over medium heat. Add onion, bacon, and salt and cook for 5 minutes until onions are softened and lightly browned. Toss in cabbage and cook for 5 minutes longer, until slightly wilted. Remove from heat, pour vinegar mixture over, season to taste, and serve warm.
