This Cajun slow-cooker stew brings together sausage, chicken, and shrimp—there’s even okra for variety!


Ingredients
Olive oil

Uncooked sweet Italian turkey sausage
8 oz
Red bell pepper
1 medium, diced
Yellow bell pepper
1 medium, diced
Sweet onions
1 medium, chopped
Celery
1 stalk(s), medium, diced
All-purpose flour
2 tbsp(s)
Reduced-sodium chicken broth
1 cup(s)
Grilled skinless boneless chicken breast
1 pound(s), cut into 1 1/2 inch chunks
Canned diced tomatoes
14½ oz
Cajun seasoning
2 tsp(s)
Cooked fresh shrimp
½ pound(s), peeled and deveined
Frozen okra
10 oz, thawed
Scallions
3 medium, thinly sliced
Instructions

In a large heavy nonstick skillet over medium-high heat, warm oil. Add sausages and cook, turning, until browned, about 3 minutes. Transfer to a 5- or 6-qt slow cooker.

Reduce heat to medium. Add bell peppers, onion, and celery; cook, stirring, until softened, about 5 minutes. Sprinkle flour over vegetables and cook, stirring, 1 minute. Stir in broth and bring to a boil, scraping up browned bits from bottom of pan. Reduce heat and simmer 3 minutes. Transfer to slow cooker.

Add chicken, tomatoes, and Cajun seasoning to slow cooker, stirring to mix well. Cover and cook until chicken is cooked through and vegetables are tender, 3 to 4 hours on Low. Taste and season with additional Cajun seasoning, if desired.

Add shrimp and okra to slow cooker, stirring to mix well. Cover and cook until shrimp are just opaque in center, about 20 minutes longer. Sprinkle stew with scallions and serve with hot sauce.
