The rich, nutty flavour of freshly grated Parmesan cheese pairs beautifully with cauliflower. You can make this recipe in just 20 minutes and you only need 5 ingredients, most of which you probably have on hand already. Just be sure to toss the cheese with the cauliflower when it comes right out of the oven so the cheese has a chance to soften and melt a bit before serving. This is one of the simplest, best ways to prepare cauliflower, and it's so hands-off, you'll find yourself reaching for this recipe again and again. You can try the same method with broccoli, baby carrots, and asparagus, too. When you want variety, use shredded reduced-fat cheddar cheese instead of Parmesan.


Uncooked cauliflower

6 cup(s), florets, fresh (about 1 head), or frozen and thawed

Olive oil

1 tbsp(s)

Kosher salt

½ tsp(s)

Black pepper

½ tsp(s), freshly ground

Grated Parmesan cheese

¼ cup(s), Parmigiano-Reggiano suggested


  1. Preheat oven to 450ºF.
  2. In a large bowl, combine cauliflower, oil, salt and pepper; toss to combine. Transfer cauliflower to a large baking sheet and spread into a single layer. Roast until cauliflower is golden brown, tossing occasionally, about 15 minutes. Remove from oven, place in serving bowl and sprinkle with cheese; toss to mix.
  3. Yields about 3/4 cup per serving.
