These mini, open-faced reuben sandwiches are piled high with corned beef, Swiss cheese, and sauerkraut. They're great party appetizers, as you can make 24 servings in just 30 minutes, and they require just 6 ingredients. As well as the corned beef, cheese, and sauerkraut, all you need is cooking spray, rye bread, and store-bought thousand island dressing. They're super-easy to make, as all you have to do is toast the bread in the oven, pile on the rest of the ingredients, then continue to bake until the cheese is melted and everything is warmed through. They're so savory and flavorful, your guests will keep going back for more.

6 slice(s), cut into quarters, or 24 mini party breads
Light thousand island salad dressing (10 calories per tsp)
¼ cup(s)
Low-fat hard or semisoft cheese
8 oz, Swiss, cut into 24 pieces
Cooked corned beef
¼ pound(s), lean, cut into 24 pieces
Sauerkraut
1 cup(s), drained
Instructions

Preheat oven to 350ºF. Coat a baking sheet with cooking spray. Place rye bread on baking sheet; coat with cooking spray.

Spread 2 teaspoons salad dressing on each piece of bread; top with 1 piece cheese, 1 piece beef and 2 2/3 tablespoons sauerkraut.

Bake for 15 minutes and serve.
