Ingredients

Reduced-sodium chicken broth

2 cup(s), or Easy soup base

Fresh shiitake mushroom

½ cup(s), stems removed and caps sliced

Ginger root

1 tsp(s), fresh chopped

Fresh ramen noodles uncooked

1½ oz, or dried

Plain baked tofu

¼ pound(s), or smoked

Uncooked scallions

1 medium, thinly sliced

Low sodium soy sauce

⅓ tbsp(s), optional

Instructions

Bring broth or soup base and mushrooms to boil in medium saucepan. Reduce heat and simmer until mushrooms are tender, about 5 minutes. Stir in ginger. Add ramen noodles and tofu; simmer until noodles soften, about 3 minutes. Pour into bowl and sprinkle with scallion. Serve with soy sauce, if desired.
