Radicchio, Goat Cheese and Fig Pizza

We recommend using black mission figs for this recipe. If you can’t find any, swap seedless red grapes in their place.

Ingredients

Whole wheat pita

8 oz, use four 2 oz pitas

Shredded part-skim mozzarella cheese

1 cup(s)

Crumbled goat cheese

½ cup(s)

Figs

12 medium, thinly sliced (or halved red seedless grapes)

Olive oil

1 tsp(s)

Balsamic vinegar

½ tbsp(s)

Dijon mustard

¼ tsp(s)

Table salt

¼ tsp(s)

Black pepper

tsp(s), (plus extra for garnish-optional)

Uncooked radicchio

2 cup(s), thinly sliced

Fresh basil

2 tbsp(s), thinly sliced

Instructions

  1. Preheat oven to 500°F.
  2. Place pita on a large baking sheet. Combine mozzarella and goat cheese in a bowl; evenly spread over pita. Scatter fig slices over top. Bake until pita is golden brown and cheese is melted, about 5 minutes.
  3. Meanwhile, combine oil, vinegar, mustard, salt and pepper in a mixing bowl. Add radicchio and basil; toss to combine.
  4. Remove pizzas from oven; evenly divide salad mixture over top. Serve immediately with extra pepper (if using).
  5. Serving size: 1 pizza
