Radicchio, Goat Cheese and Fig Pizza
Whole wheat pita(s)
8 oz, use four 2 oz pitas
Shredded part-skim mozzarella cheese
Crumbled goat cheese
12 medium, thinly sliced (or halved red seedless grapes)
⅛ tsp(s), (plus extra for garnish-optional)
2 cup(s), thinly sliced
2 tbsp(s), thinly sliced
- Preheat oven to 500°F.
- Place pita on a large baking sheet. Combine mozzarella and goat cheese in a bowl; evenly spread over pita. Scatter fig slices over top. Bake until pita is golden brown and cheese is melted, about 5 minutes.
- Meanwhile, combine oil, vinegar, mustard, salt and pepper in a mixing bowl. Add radicchio and basil; toss to combine.
- Remove pizzas from oven; evenly divide salad mixture over top. Serve immediately with extra pepper (if using).
