Radicchio, Goat Cheese and Fig Pizza

Whole wheat pita
8 oz
Shredded part-skim mozzarella cheese
1 cup(s)
Crumbled goat cheese
½ cup(s)
Figs
12 medium
Olive oil
1 tsp(s)
Balsamic vinegar
½ tbsp(s)
Dijon mustard
¼ tsp(s)
Table salt
¼ tsp(s)
Black pepper
⅛ tsp(s)
Uncooked radicchio
2 cup(s)
Fresh basil

Preheat oven to 500°F.

Place pita on a large baking sheet. Combine mozzarella and goat cheese in a bowl; evenly spread over pita. Scatter fig slices over top. Bake until pita is golden brown and cheese is melted, about 5 minutes.

Meanwhile, combine oil, vinegar, mustard, salt and pepper in a mixing bowl. Add radicchio and basil; toss to combine.

Remove pizzas from oven; evenly divide salad mixture over top. Serve immediately with extra pepper (if using).
