Ingredients

Uncooked lean pork tenderloin

Margarine

1 tbsp(s)

Onion

2 small, sliced

Table salt

½ tsp(s)

Black pepper

¼ pinch(es)

Sugar

1 tbsp(s)

Table wine

¼ cup(s), port

Balsamic vinegar

2 tbsp(s)

Cherry tomatoes

1 cup(s), chopped

Unsweetened frozen blueberries

1 cup(s)

Instructions

  1. Heat broiler. Broil pork, turning occasionally until cooked through, about 20 minutes. Remove to platter; cover with foil to keep warm.
  2. Meanwhile, melt margarine in a large skillet over medium-high heat. Add onions, salt and pepper; cook until onions are golden, about 10 minutes. Add sugar; cook until onions are caramelised, 3 minutes longer. Add port, vinegar, blueberries and tomatoes; heat to boil. Remove from heat. Thinly slice pork and serve with sauce.
