Ever had a turkey burger that was dense and dry? These are guaranteed to be the opposite—and they use lean ground turkey breast. We incorporate some breadcrumbs into the mixture to help keep the texture looser, while store-bought pesto adds moisture and infuses rich herbal goodness and savory notes of Parmesan. A thick slice of grilled red onion adds a little crunch and mellowed allium flavour.

Cooking spray

Uncooked 99% fat-free ground turkey breast

1 pound(s)

Dried plain breadcrumbs

¼ cup(s)

Pesto sauce

¼ cup(s)

Kosher salt

Black pepper

½ tsp(s)

Red onion

4 slice(s), thick, about 1/2-inch thick each

Light whole wheat hamburger buns

4 bun(s), or similar product

Light mayonnaise

8 tsp(s)

Tomato

8 slice(s), about 1/4-inch thick each

Instructions

  1. Coat stovetop grill pan with cooking spray. Preheat grill pan to medium-high heat.
  2. In a medium bowl, combine turkey, breadcrumbs, pesto, salt, and pepper. Divide mixture into 4 equal portions, shaping each into a ½-inch-thick patty.
  3. Coat both sides of turkey patties and onion slices with cooking spray. Arrange patties, onion slices, and buns on grill pan. Grill buns until toasted, about 1 minute. Cook patties and onion slices until done, 4 to 6 minutes per side.
  4. Spread 2 tsp mayonnaise on bottom half of each bun. Top each with 1 patty, 1 onion slice, 2 tomato slices, and top half of bun.
  5. Serving size: 1 burger

Notes

To have everything at the optimal temperature, grill-toast the buns first, then grill the onions, and cook the chicken last.
