Orange-Honey Cake

Honey cake is traditionally served on the first night of Rosh Hashanah to symbolise the sweetness of the year to come.

Honey
⅔ cup(s)
Sugar
⅓ cup(s)
Raw egg
2 large
Reduced-calorie margarine
¼ cup(s), soft
All-purpose flour
2¼ cup(s)
Baking powder
1 tsp(s)
Baking soda
½ tsp(s)
Ground cinnamon
1 tsp(s)
Table salt
¼ tsp(s)
Black coffee
¼ cup(s), strong
Chopped walnuts
½ tbsp(s)
Orange zest
2 tbsp(s)
Instructions

Preheat oven to 325°F (165°C).

Spray an 8-inch (20 cm) round baking pan with cooking spray. Line with wax paper.

In large bowl, combine honey, sugar, eggs and margarine and mix well.

In small bowl, combine flour, baking powder, baking soda, cinnamon and salt. Stir half of flour mixture into honey mixture, then add coffee; stir well. Stir in walnuts and orange zest.

Bake in oven 30 minutes or until a knife inserted into centre of cake comes out clean. Cool on wire rack.
