One-pot pasta primavera with shrimp
Fat free reduced sodium vegetable broth
1 medium, yellow, sliced
1 head(s), florets, chopped
20 spear(s), medium, ends trimmed, chopped (1 bunch)
5 clove(s), medium, minced
1 cup(s), chopped
Sweet red pepper(s)
1 medium, sliced
Crushed red pepper flakes
10 tbsp(s), chopped (1 bunch)
Fresh lemon juice
Low fat cream cheese
- Set a large wide bottomed Dutch oven or stock pot over high heat.
- Add the stock to the pot and bring to a boil. Add pasta, simmer 1 minute.
- Add all ingredients (except cream cheese) and stir frequently.
- Cook 10 minutes.
- At the 10 minute mark add the cream cheese and let melt for 2 minutes.
