Ingredients

Red onion

1 large, cut into wedges

Apple

1 medium, cored and cut into thick slices

Uncooked fennel bulb

1 medium, cut into 1/2-inch-thick slices

Olive oil

2 tsp(s)

Garlic herb seasoning

1 tsp(s), or steak seasoning (or to taste)

Uncooked lean trimmed boneless pork chop

16 oz, four 4 oz pieces

Table salt

tsp(s), or to taste

Black pepper

1 pinch(es), or to taste

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, combine onion, apple, fennel, oil and seasoning; toss to coat and spread out on a large nonstick baking sheet. Bake for 15 minutes.
  3. Meanwhile, season pork to taste with salt and pepper.
  4. After vegetable mixture has cooked for 15 minutes, remove pan from oven and toss; move vegetable mixture to sides of pan and add pork to middle of pan. Bake until pork is cooked through and vegetables are very tender, about 15 minutes more. Yields 1 pork chop and about 3/4 cup vegetable mixture per serving.
